STRAWBERRY TARTLETS

PIE CRUST

1 package pie crust mix                                               water

1. Follow directions on package but place in ziplock freezer bag and pass around   to have bag squeezed to mix the crust.

2. Roll on floured waxed paper 1/8" thick and cut with round 2 " cookie cutter.

3. Place in mini muffin tins and prick with fork.

4. Bake at 450°F for 8 to 10 minutes.

STRAWBERRY FILLING

1 pint strawberries                                                          1/3 cup sugar

1 Tablespoon lemon juice                                           1 Tablespoon cornstarch

whipped cream

1. Clean, cut and mash berries in saucepan.

2. Add remaining ingredients and cook while stirring over low heat until thick and transparent.

3. Cool slightly. Place in tartlets and top with whipped cream.

 

EQUIPMENT NEEDED

oven,  hot plate, ziplock bag, measuring spoons, rolling pin, waxed paper, flour, cookie cutter, fork,  saucepan, 1/3 cup measure, spoon, masher, muffin tins,  serving plate, paper towels
